Crockpot Turkey & Sweet Potato Curry
Great recipe for leftover Turkey! I chopped about 3 cups. Throw into crockpot.

Add one bell pepper ( any color will work!) and one large chopped sweet potato. You can really add any veggies to this!

Add one chopped onion ( I used yellow and 2 heaping tbsp minced garlic.

Add 1.5 cups broth. I used bone broth but veggie or chicken broth, etc will work!

Add in 2 cans coconut milk!

Now for your spices! 2 tbsp curry powder, 3 tbsp chili powder, 1 tbsp ground ginger and 2 tbsp turmeric.

Cook in your crockpot for 4 hours on high. Add a handful of greens! Can be spinach, kale, etc! Add 2 tbsp salt and 2 tbsp pepper to taste.

You never knew healthy food could be this comforting! Garnish with cilantro & green onion!
