Crunchy Homemade Granola - Healthy and Vegan
Mix together 2 1/2 cups rolled oats + 1/3 cups almonds sliced + 1/3 cup pecan halves or pcs. + 1/3 cup sunflower seed or pumpkin seeds.
Mix together. 3 tbs. melted coconut oil or vegetable oil+ 1/2 cup real maple syrup + 1 tsp. vanilla.
Add the liquid mixture to the oats mixture.Stir to coat the oats, nuts & seeds.
Spread on a lightly greased sheet pan.
Bake at 325 degrees. Stir every 30 minutes and continue baking until the granola is dry and crunchy. Usually about 90 minutes.
Once done, remove from the oven.
Once the granola is cooled it should be dry & crunchy. If it is soft and lacks crunch, bake an additional 30 minutes.
Add 1/2 cup unsweetened coconut flakes. + 2 cups of a mixture of dried fruit cut into small pieces.
