Curried Chickpeas With Spinach - Quick & Easy
Heat oil over medium heat in a skillet or sauce pan

Add onion,garlic, chili, and ginger and sauté until onion is softened and translucent

Add the curry and cook off for a minute and then stir in the tomato paste

Add the water or you could use broth/stock instead

Then stir in the spinach and let it cook a couple of minutes until it starts to wilt

Stir in the chickpeas

Extra water or broth

And simmer until chickpeas are tender and sauce has reduced 12-15 min or until it’s the thickness you prefer

You can add some creaminess to dish by serving it with yogurt or you could stir in cream or coconut milk right before the dish comes off the heat
