Pour the almond milk and vinegar into a measuring cup. Let stand for 5 minutes. You will see the milk curdle
In a large bowl add flour, baking power, baking soda, and salt
Whisk to combine
Add in eggs, avocado oil, and the milk mixture. Whisk until smooth and combined
Spray your waffle maker and pour 1/3 of a cup of the batter into the waffle maker at a time and cook until golden brown and crispy
Transfer to a 200 degree oven to keep warm while you cook the rest. Then devour with your favorite toppings!
