12 Days of Cookies Day 6- Cinnamon Biscotti
Preheat oven to 350 F.

Chop pecans using manual food processor or food chopper, toast for 6min & allow to cool.

Sift together flour, baking powder, and cinnamon and set aside.

Cream butter & sugar. Add in eggs & vanilla, mix til incorporated. Add in dry ingredients & pecans.

Divide the dough in 2 and shape into 7” by 2” logs. Space 4” apart on lightly greased sheet.

Bake for 30 mins then remove to adjustable cooling rack to cool for 15 mins.

Remove to cutting board and using a bread knife gently cut into 1/2” pieces at an angle.

Put them side up on baking sheet and return to oven for 20-25 minutes or until dry.

Remove from oven and place Cookies on adjustable cooling rack to cool completely.

Optional: decorate with melted chocolate chips and allow to dry. Enjoy 😋
