Delicata Squash Salad + Maple Miso Dressing
Slice two Delicata squash and scoop out the seeds. Bake at 400 for 20 minutes.

Rinse off some of the seeds and sprinkle with cayenne. Bake for 15 minutes, watch for burning.

Mix 2T miso, 2T tahini, 2T maple syrup, 1/2t sriracha, + 4T water. Massage 1/2 into the kale.

Top the kale with cooked squash and cherry tomatoes.

Sprinkle with the toasted seeds and drizzle with dressing. Enjoy!
