Prepare all the ingredients

Cut both aubergines in half

Brush a little bit of oil on the skins and bake on gas mark 6 for 30 Minutes

Once out the oven, chop into bite size chunks

Add cumin seeds into the pan, cook until they start popping

Pop in chopped onions

Add chilli & garlic

Add turmeric powder, ground coriander, cumin powder and garam masala

2 tbsp tomato puree

Pop in the aubergines

Add salt, cook for around 10 minutes with the lid on.

Finish with fresh coriander
