Delicious Chole Ki Sabzi!
What you'll need
for garnish
Coriander Leaves
1/2 tbsp
Kasuri methi
2-3 small
Green Chilly

1/2 cup or 1 pc
Fresh Onion Puree
1/2 tbsp
Baking Powder
1 tbsp
Coriander Powder
2 pcs
Bay Leaf
1 tbsp / per taste
Salt
1 pc
Cinnamon Stick
1/2 tbsp
Turmeric Powder
1/2 tbsp
Asafoetida / Hing
1 tbsp
Dry Mango /Amchur Powder
2 pcs
Black Cardamom (Badi Elaichi)

Tea Bags (Any)
1 tbsp
Chilli Powder
2 tbsp
Cumin / Jeera Seeds
2 cups
Water
2 tomatoes / 1 cup
Fresh Tomato Pureè
1 cup
Chole / Chickpea
1 tbsp
Cumin Powder
Soak 1 cup chickpea/channa over night or for 8 hours....Make sure you add enough water as the soaked channa doubles up in size and quantity.

When ready to cook - Add 2 tea bags, 2 bay leaf, 1 black Cardamom, 1 cinnamon, 1/2 tbsp baking powder (optional). Tea bags help add colour to chole

Now add 2 cups water to the cooker and 1/2 tbsp salt. Cook it for 8-10 whistles...channa to water ratio should be 1:2

Prepare homemade chole masala. 1/2 tbsp turmeric powder, 1 tbsp coriander, cumin, and dry mango powder. Add Salt & Red chilli powder per taste.

Now add some water to the masala. It should be like the consistency in the video. Not too thick not too runny

Heat 2-3 tbsp oil in a pan. Add 1/2 tbsp hing, 1 tbsp Cumin seeds. Now add puréed onion and sauté till it is lightly brown

Once onions have browned, add puréed fresh tomato. Sauté for 30 seconds.

Now, add the home-made chole masala, mix well and add 1/2 tbsp crushed kasuri methi. Let the gravy cook for 2-3 minutes on medium to low flame.

Now let’s add 1/3 a cup of water to it....Let it cook again for 2-3 more minutes

Add boiled chickpea to the pan and give it a stir

Next, take a masher and mash some of the chole to make the gravy thick. Add 1/3 cup more water and let it boil for 5 minutes on low flame.

Let’s empty the chole into a serving bowl and prepare the tadka and garnishing

Hear 1tbsp oil. Add 1/2 tbsp Jeera, 2-3 green chillies. Sauté for 10-15 sec. Add red chilli powder per taste. Add tadka and garnish with coriander

I serve chole with hot puris and kheer. You can eat with kulcha or rice as well. Enjoy 😊
