Dice one onion

Peel and chop 3-4 cloves garlic

Size 2.5 lb chuck roast into four pieces

Sear both sides, then remove

Chop one cup carrots

Chop one cup celery

Saute onion and garlic in 3 tbsp olive oil for 2 minutes

Add celery and carrots, stir and cook for 5 minutes

Add beef, 1 c broth, 28 oz can tomatoes, 1 c red wine, 3 tbsp tom paste, 3 sprigs thyme & 3 Bay leaves. Set quick cooker to beef 45 minutes

Shred beef with salad choppers

Serve over your favorite pasta with freshly grated cheese!
