Delicious Summery Filo Parcels
Ingredients; 1 aubergine • 1 courgette • 1 onion • 3 tomatoes • 3 garlic • parsley • thyme • bayleaf • cayenne pepper • olive oil • filo pastry

Chop aubergine + courgette + onion + 1 tomato in similar size cubes • slice garlic • chop fresh thyme

Heat olive oil • sauté onions till softened • add aubergine until softened • add spices, salt, chopped thyme, parsley • add tomato • very low simmer

After 15 min. on low simmer add the courgette and simmer on very low heat for another 30 min. Until all is cooked but still keeping the cube shapes

Season the veggie mixture well ! • Pack the filo parcels with 2 or 3 filo layers • oil the layers • add 4 Tbsp veggie mixture • shape into ‘purses’

Wrap with cooking string and bake for 10 - 12 minutes on 210C / 410F

Dress the plates with 2 sliced tomatoes + olive oil + white balsamic vinegar + salt & pepper • and add grilled asparagus and micro greens or herbs

Add the baked parcel (don’t forget to discard the cooking string) , and enjoy!
