Delicious Zaalouk
Ingredients ; aubergine - tomatoes - garlic - paprika powder - cumin - turmeric - lemon - coriander - parsley
Place the aubergine over a charcoal grill or on a lit gas hob (or camping gas if you don’t have a gas hob). Cook the aubergine evenly.
When you can easily squeeze the aubergine and the skin is getting lightly burned, place the aubergine in a Tupperware and close with the lid.
After 1 hour when it is cooled down, peel the skin of the aubergine and scrap out the lovely smoked flesh.
Heat some olive oil and sauté the garlic and spices (approx. 30 seconds)
Add the chopped tomatoes, give at a good stir and bring to a simmer. Leave to lightly simmer covered for 15 minutes
Add the chopped up flesh of the aubergine, and simmer for another 10 minutes.
Check the consistency of the zaalouk, if you want it creamier, pulse a few time with a hand blender. > add the fresh herbs.
Season to liking with some lemon juice, salt and pepper. Et voilá! ... enjoy as a side dish or as a tapas.
