Prepare; •pre-boiled potato •panfried aubergines •pre-soaked cashews

Medium hot pan add olive oil

Add all ingredients for sauce except lentils, simmer covered 20 minutes

Mix in the lentils, simmer covered for 10 minutes

Season with; •balsamic vinegar •salt •black pepper

Whizz only 7 or 8 times shortly with a handblender

Start making the vegan bechamel by blending the soaked & drained cashews

Add water to get the right texture & thickness

Add all other ingredients and Whizzz

Layer the; potatoes - aubergines - lentil sauce - top with the vegan béchamel

25 minutes in a pre-heated 180C / 350F oven

Cool down slightly, serve & ENJOY!
