Double Chocolate Mint Crinkle Cookies
Melt chocolate then set aside

Whisk together the cocoa powder, flour, baking powder and salt

In a large bowl add softened butter and sugar

Mix until mixture is light and fluffy

Then mix in the eggs, vanilla, and peppermint extract

Then mix in the melted chocolate

Mix in the dry ingredients a little at a time until fully incorporated

Scrape down the sides to make sure it’s fully mixed

Wrap with plastic and chill dough 1 hour or overnight

Scoop & roll out approx 1 - 1 1/2 tbsp of dough, roll in granulated sugar then powdered sugar & bake

Until perfectly crackly
