Dry Aged Smoked Ribs
Season ribs and leave on sheet pan, uncovered overnight.

The ribs will be dry aged and well seasoned.

Put them on a pellet smoker at 350 F for 30 minutes.

Wrap in foil and lower temp to 225F.

After one hour, bast with BBQ sauce. Cook for one more hour at 225F.

Pull ribs off smoker and let stand 15 minutes. Cut and serve.
