In a large bowl add 4 C. All-purpose flour, 1/2 C. Parmesan cheese, 1/2 tsp sugar, 2 tsp salt.

Add 1 pkg of instant yeast

Grind fresh rosemary. Add 1 tsp to mix.

Add 1 C. Of warm water. 120-130 degrees F.

Place on floured surface and knead until a smooth ball is formed about 5-6 minutes.

Place in med. bowl, brush with olive oil.

Cover and place in warm area until it has doubled 1-2 hrs.

After it had doubled place on flour surface and kneed. Shape into a bowl pinching seams underneath.

Place on a piece of parchment paper and brush with olive oil. Cover and let rise for 1-2 hrs.

Heat Enamel Cast Iron Dutch oven in a 450 F oven for 30 min. Add dough

Brush with olive oil and top with 3 tbsp of Parmesan and 1/4 chopped rosemary.

Score a large X on top of dough.

Cover and bake in oven for 30 minutes.

Remove lid and bake for an additional 8-10 minutes until golden brown.

Let cool on rack for 15-30 minutes before serving.
