East African Mandazis (beignet)
What you'll need

Self-raising Flour

Cardamom powder

Caster sugar (granulated sugar)

Coconut Milk

Eggs
Gather and weigh all your ingredients

In a large bowl, mix the flour, sugar and cardamom powder

In a separate bowl, whisk together the coconut milk and eggs

Add the wet ingredients into the dry and mix to combine
Time to get the hands dirty - knead for a few minutes until the dough is no longer sticking to the bowl
Turn the dough on a lightly floured surface and knead to form a smooth dough (about 3-5 minutes)

Form a ball with the dough, then place it in a bowl and cover with a damp kitchen towel. Leave it to rest for at least 15 minutes

After resting, roll out the dough to about 1cm thickness. Using a knife, cut into cube shapes (don’t have to be perfect)

Heat some coconut oil in a deep pan (deep fryer works too). Pop some pieces and fry each side until golden brown - about 2-5 minutes (depends on size)

Repeat until everything is fried up. Enjoy with a cup of tea or chai masala or coffee.
