Prepare ingredients. Preheat oven to 350C

Bowl One: 1 1/4 cups unsweetened applesauce 2 cups sugar 3 eggs room temperature

Bowl Two: 2 cups flour 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1 tsp cinnamon

2 cups grated carrots 1 cup chopped pecans 1 tsp vanilla 1 cup Dole crushed pineapple *Optional: 1 cup of shredded sweetened coconut

Mix ingredients together and pour into three 6 inch cake pans. Bake for 35 minutes, or until toothpick comes out clean.

Cool in cake pan for 10 minutes, then completely on cooling rack.

To make frosting, blend 1/2 cup of butter and 1 cup of cream cheese at room temperature.

Add 1 tsp of vanilla and 2 cups of icing sugar.
