Stir the GF yeast in the WARM water or DF milk and leave for a few mins until they’re foamy

Whisk well the GF flour, GF polenta and sugar

Add the baking powder, cinnamon & salt and whisk again

Add the oil & yeast mixture then mix until all is well incorporated

Mix for a few mins, add more oil if dough is too dry. Then place the dough in the FRIDGE for around 1 hour

Once chilled, I highly recommend to shape the dough like this. Finally bake on medium heat until they’re golden brown
