Easy Asparagus & Ricotta Crustless Quiche
What you'll need

Eggs ( Pasture Raised)
One cup
Ricotta Cheese
1 bunch, chopped
Asparagus
1/4 cup
Onion
2 tbsp
Avocado Oil
2 tsp
Garlic Powder
Salt + Pepper To taste
Dice your asparagus into bite sized pieces. Add with one tbsp avocado oil in pan.

Add 1/4 cup diced onion. Sautée until veggies are translucent.

Season with a few tsp garlic powder. Add a sprinkle of salt & pepper. Mix well & set aside.

Add one cup whole milk ricotta cheese to a mixing bowl. Crack 6 eggs and add in. Add 2 tsp oregano and pinch of salt. Whisk together.

Pour your softened veggies into your bowl and lightly whisk together.

Using avocado oil spray, make sure your pan that you will bake the quiche in is well greased.

Pour egg mixture into greased dish. Bake at 350 degrees for 20 minutes until the middle is firm.

Sprinkle with some dried parsley and serve!
