Easy Birria Taquitos with Don Pancho Carb Control Wraps
The low carb Birria filling cooks in the crockpot, then the Taquitos are baked or air-fried to keep the calories low. Perfect!
Trim the tops off the dried chiles and remove the seeds. Cut into sections & place in a blender.

Pour hot water over the chiles & let them soak 10 minutes.

Add Chipotle chiles & tomatoes. Blend until puréed.

Place chuck roast or similar cut in a crockpot with onion & bay leaves.

Add the Birria sauce & stir. Cook on low 5 hours or on high 7 hours. Meat should be fork tender when done.

Shred the Birria meat.

Grate some cheese and prepare to roll. These tortillas only have 3 net grams of carbs & just 50 calories. Wow!!

Add a few tablespoons of filling, cheese, and chopped onion if desired. Roll tightly.

Air fry or bake in the oven. Brushing with a small amount of oil will help crisp the Taquitos.

8 minutes later we have crispy Birria Taquitos! Serve on a bed of lettuce and with bowls of Birria dipping sauce.
