Easy Chocolate Pudding (with Irish Cream Option)
Place cornstarch, sugar, salt and espresso powder if using in a medium size sauce pan and whisk

Whisk in the milk next until well combined

Place over medium/low heat, cook below a simmer for approx 10 min - until thick enough to coat back of spoon

Stir in the finely chopped chocolate and continue to cook

Stir in the Baileys if using and the vanilla and keep cooking a few more minutes

Until thickened & rich - then pour into bowl or separate cups - cover with plastic wrap & refrigerate 2-3 hours
