Warm milk, heavy cream, vanilla extract, & salt to a simmer

Temper yolks/sugar & warm cream mixture (ladle in)

Strain and cool 5 hrs to overnight

Or strain directly into baking dish (cooling in between is suggested)

Add very hot water 1 in. up smaller dish

Bake at 325F until appears dull on top and center is just set (40-50 min)

Bake till a uniformed jiggle and cool on rack

Sift sugar & torch 4in. from sugar just to melt granulated (repeat once if thicker crust desired)

One more layer of sugar

Torch till browned and allow (10 min) cooling to harden
