Easy General Tso's Chicken!
Whisk 2 eggs in first coating tray; stir together 1 cup each flour & cornstarch in second tray, add salt and pepper to taste

Slice 1 1/2 lb. boneless chicken thighs into pieces

Dip chicken pieces in egg, then coat with flour cornstarch mixture; place in third coating tray

Heat 3 in of oil in double burner grill pan, place all chicken in pan and cook for 5 minutes, or until browned

Remove chicken to colander

Press two cloves garlic

Heat 2 tsp oil. Add garlic & 1/2 tsp red pepper cook for 30 seconds

Add 3/4 c chicken broth, 1/4 c soy sauce, 2 tbsp hoisin sauce, 2 tbsp brown sugar & 1 tbsp cornstarch; stir and cook 2-3 minutes or until thickened.

The sauce is beautiful, shiny and slightly thickened!

Toss chicken in sauce (I also added some broccoli)

Sprinkle some sesame seeds and green onions before serving. Enjoy!
