Melt 1 Tbsp. butter.

Add onions and cook until soft.

Add salt, pepper and thyme leaves.

Add another Tbsp. butter and brown mushrooms.

Add last Tbsp. butter and stir to melt.

Add flour and cook 1 minute.

Add chicken stock, stir in then simmer 10 minutes.

(Optional) Blitz 1-2 times with immersion blender.

Add cream and warm through.

Add additional salt, pepper and thyme, to taste.
