Easy Homemade Crockpot Vegetable Soup
Add chicken broth, butternut squash, celery, cauliflower, tomato paste, fire roasted tomatoes, carrot, red bell pepper, and zucchini to slow cooker

Add sea salt, dried oregano, dried basil, ground cumin, and black pepper to vegetable mixture. Stir to combine

Cut the tip off a head of garlic. Rub exposed tips with olive oil. Wrap the head of garlic tightly with tinfoil

Place the wrapped garlic head in the center of the soup in the crock pot. Cook on high until the veggies are fork tender, 2-4 hours

Once the vegetables have cooked, stir in parsley and spinach. Cook another 30-60 minutes until spinach is wilted

Remove the garlic packet from the soup. Squeeze out the softened cloves and dice them

Add diced garlic back into soup and adjust seasonings if needed
