Easy Keto Strawberry Shortcake
The perfect summertime keto dessert!

Add 8 oz fresh sliced strawberries to a bowl.

Mix in 1 tablespoon monkfruit and lemon zest.

In a medium bowl add 1 1/2 cups almond flour, 1 1/4 teaspoons baking powder, 1/2 teaspoon salt. Mix.

In a large bowl, whisk together two eggs and one egg white.

Add in 1/2 cup monkfruit and beat until frothy and pale yellow in color.

Fold in dry ingredients.

Fold in 2 tablespoons of heavy cream and melted butter. Plus 2 teaspoons vanilla.

Equally pour batter into two 6-inch cake pans, greased and lined with a parchment circle.

Bake at 350 degrees for 12-15 minutes.

Transfer to a wire rack to cool.

To make whipped cream, add 2 cups of heavy whipping cream and 1 teaspoon of vanilla.

Beat until stiff peaks form.
