5-6 lb Lamb Leg Roast: Pat dry with a paper towel

Shallow slice fat side (bottom), Stab 1” holes on top

Rub all sides of roast with olive oil

Chop 1+ Tbsp of rosemary and sage, slice 5 garlic cloves

Push garlic into the holes in the top of the meat

Sprinkle and pat roast with herbs

Sprinkle with salt and pepper

Roast @ 400 degrees F for 20 min

Turn oven down to 350 degrees F and cook for another 2 hours

Temp with a meat thermometer 145 F for med-rare, 160 F for medium

Tent with foil and rest for 15 minutes
