Add the flour, powdered sugar,granulated sugar, salt,& lemon zest in food processor

Pulse a couple of times to combine then add the cold cubed butter

Pulse until the dough starts to come together (do not over process)- then press into a greased pan

While the crust is baking make filling - start by whisking the eggs & yolk

Whisk in the powdered sugar, granulated sugar, flour, salt,& lemon zest(optional)

Along with the lemon juice

Whisk until smooth

Pour over warm crust & bake again

Remove & allow to cool to room temperature & then cover and refrigerate for 2hrs- overnight

Then slice and enjoy
