Easy Mexican Lasagna with Corn Tortillas
Add olive oil to a hot pan and cook ground beef until browned

Add in taco seasoning, water, and green onions. Stir in salsa and corn

Spray a 9”x13” pan with non stick spray and place a layer of tortillas along the bottom

Top with diced hatch chiles, ground beef, Mexican cheese blend, and enchilada sauce

Repeat layers twice in that order, topping it all off with cheese

Cover with foil and bake at 350 for 45 minutes. After, remove foil and bake for an additional 10 minutes

Allow taco lasagna to cool for 10 minutes, serve and enjoy!
