EASY Mexican Street Corn Salad aka Esquites
So simple to make and such a delicious side dish for any occasion!
Start by grilling your corn and cutting it from the cob. You can also use canned corn!
Make the sauce by mixing together: agria sour cream, mayo, lime juice and zest, salt, garlic, and chili powder
In a large bowl combine the corn, cilantro, bell pepper, jalapeno, and cotija cheese
Pour in the sauce and mix it all to combine!
Garnish and ENJOY!
