Easy 20 Minute Chicken Piccata
Slice lemon in half - squeeze juice out of one 1/2 and slice the other 1/2

Whisk together almond flour/or all purpose flour with salt & pepper & any other seasoning you prefer

Whisk eggs with salt & pepper and any other seasoning you prefer

Heat olive oil and butter on medium high heat

Dredge chicken in egg mixture then flour mixture

Place in pan and pan fry for 4-6 minutes each side until golden brown

Lower the heat slightly if you find it’s browning too quickly

Remove and set on a plate and repeat as needed until all pieces have been browned.

Add the garlic to the pan and cook one minute until fragrant

Add broth and wine

Lemon juice capers, salt and pepper

Plus the reserved lemon slices and allow to boil until slightly reduced

Swirl the remaining butter in

Add your chicken back into the pan

Sprinkle with fresh parsley and cook a few more minutes until chicken is cooked through

Serve with rice, pasta, mash or veggies and with extra lemon slices
