Easy Moist Vanila Cake w/ Chocolate Frosting

Preheat oven to 350 and grease and flour 8 inch pans (if using 9” reduce bake time)

Mix 2 1/4 cup flour, 1/4 cup cornstarch, 1 1/4 tsp baking powder, 1/4 tsp baking soda + 1/2 tsp salt

Melt 10 tbsp butter and add 3 tbsp oil

Add 2 cups sugar and beat well - 3-4 minutes

Put 3 eggs and 3 egg yolks in a bowl and add in 3 increments whipping well between each

Add in 2 teaspoons vanilla extract, mix

Alternate between your dry ingredients and one cup buttermilk in two additions

Stop as soon as it’s combined and scrape sides

Add batter to pans

Bake 30-35 minutes or until cakes are golden & a skewer comes out clean. Remove after 5 min to cool

Break 150g semisweet or bittersweet (preferred) chocolate into pieces (or use 3/4 cup choc chips)

Melt and add 2 cups icing sugar, half a cup of butter, 1/2 tsp coffee

Add 1/2 tsp salt, 1 tsp vanilla and 1/3 cup whipping cream

Nice and fluffy!

Slice cooled cakes

Divide frosting in half. Pipe a ring outside bottom layer

Spread the remaining half inside and drizzle with storebought caramel or chocolate sauce (optional)

Place the second layer on top
