Easy No-Fail Lime Or Lemon (citrus)Curd
Whisk together the cornstarch and sugar in a small pot

Add the salt, yolks, citrus juice, zest along with room temperature butter; turn on heat to Medium

Continue to patiently whisk until thickened and then remove from heat

Pour through a fine mesh sieve

Mix in your flavorings if adding - I love to add citrus liqueur (up to 2 tbsp)

Place plastic wrap right over the curd to prevent skin from forming, wrap & refrigerate

Enjoy with scones, cakes, crepes, trifles and much much more
