Whisk together flour, salt and yeast

Cover with plastic wrap and refrigerate 8-12 hours (overnight)

Remove dough from fridge, grease hands with a little oil & then deflate dough & pull into a ball

Cut dough in half for two 9inch round focaccia (leave whole for a 9x13 one)

Drizzle olive oil into pans then roll each ball into the oil to coat and leave as is for 2-4 hours

Until they rise to fill pan- Drizzle with olive oil & use fingers to create deep dimples into dough
