You'll start with a 1lb pork tenderloin. Cut and cube into 1 inch cubes.

Place your pork into a medium sized bowl. Season with 1 tbsp of Chili Lime Rub. Mix well.

Cut 1 onion into quarters and place into Manual Food Processor. Pump and release handle. The more you pump, the finer it will chop.

Heat 6 Qt Enameled Dutch Oven over medium heat for 2 -3 mins. Add in 2 tbsp of vegetable oil . Add pork and cook until lightly browned, about 3-4 mins

Using Garlic Press, press in 4 cloves of garlic. Add in your chopped onion and cook them until softened, 2 -3 minutes.

Add in 3 cups of Chicken broth, 1 -10oz can of mild red chile enchilada sauce and 2 - 15.5 oz cans of white hominy (drained).

Add in 2 bay leaves and 1/2 tsp of salt . Stir and cover . Reduce heat to low simmer, until pork is tender about 10-12 minutes.
