Cook the basmati rice

Drain and set aside

Caramelize the onions and set aside

Combine the prawns with the yogurt and spices and marinade for 30 min

Heat oil and fry bay leaf, cloves and cardamom pods for a few seconds

Add ginger garlic paste and fry for a few seconds

Add the diced tomatoes, fresh herbs

And the caramelized onions and spices

Add the prawns and simmer for a few min until cooked through

Taste for seasoning

Layer a large pot with half the cooked rice

Then the full prawn gravy mix

Then the remaining half of the rice

You can mix a handful of rice into the pan that shrimps were cooked in and put on top for some color

Finish layering the rice

Add some fresh mint and cilantro

And cover pan tightly with foil, cook on low heat 15-20 min

After cooking, rest 15 min then open up and serve
