Separate 2 egg whites and sift 3 cups of powdered sugar.
Add the egg whites and either 1 tsp lemon juice or 1 tsp vanilla and beat until frothy.
Add the powdered sugar and beat on low til mixed. Then raise speed to high for 5 minutes.
You want the consistency to be thick, stiff and glossy in appearance. Load into piping bag to use.
