Easy Scallion Pancakes
2 cups flour, 2 Tbsp toasted sesame oil + more, 2 cups chopped scallions, 3/4 boiling water

Add boiling water and 2 Tbsp oil to the flour.

Knead into a shaggy dough, cover and rest for 1 hour.

After 1 hour, the dough will be smoother and easier to handle - cut into 8 even pieces.

Chop up scallions and cilantro.

Roll out each piece of dough into an oblong shape, brush with sesame oil and fill, salt lightly.

Roll away from you like a cinnamon role and coil. Pinch to seal.

Make all of your pinwheels so they’re ready when you heat your pan.

Roll out - 7 to 8 inches in diameter.

Heat a pan on med-low heat, brush with oil and add the pancake.

Cook both sides until golden brown, serve with sambal or gyoza sauce.
