Easy Sheet Pan Shortbread
Add 1 lb. room temperature butter to bowl and mix for 1 minute.

Add 1 cup confectioners’ sugar and mix at medium until smooth, about 1 minute more.

With mixer on low, gradually add flour/cornstarch mixture (3 1/2 cups all purpose flour whisked with 1/2 cup cornstarch)

Mix until well combined.

Spoon onto undressed 9x13” sheet pan.

Press to cover bottom with spatula.

Use palm of hand to smooth and level.

Poke all over with a fork and bake in preheated 325F oven for 40-45 minutes.

Remove from oven, sprinkle with 2 Tbsp. white sugar and cut into slices while still hot.

Allow cookies to cool completely in pan before removing cookies.
