Easy Spinach & Avocado Quinoa Bites
To a blender add 3 1/2 cups of spinach

Add 1 large ripe avocado

A little salt for seasoning

Add 2/3 cup of almond flour

Blend until combined, you may need to stop and stir a couple of times

Add your mixture to a large mixing bowl

Add 2 cups of cooked quinoa

Add some gelled chia (chia soaked in water, for binding)

Using your hand mould into little balls place on a baking tray lined with parchment paper

Pop on the oven at 180 degrees Celsius for 18-20 mind or until lightly browned
