Easy Stuffed Peppers (Greekstyle)

Sauté onions, celery and carrots until softened

Seasoning with salt and pepper along the way

Stir in garlic,oregano along with the fresh herbs (dill,mint,parsley)

Then stir in and brown minced meat (beef, turkey, lamb,or vegan)

Stir in the tomato paste

Deglaze with wine (optional)

Add crushed/chopped tomatoes

Add the Arborio rice (or your choice of grain

Then stir in the broth or water

Season with salt and pepper to taste and simmer until rice is par cooked and sauce has thickened

Stir in the cheese (optional)

Prepare peppers by cutting off the tops and removing seeds & place upright in baking pan & stuff

Place the cap on

And continue to fill the rest

Toss in the potatoes if using

Pour the sauce and broth/water into the pan around the peppers

Drizzle the peppers with olive oil and season with salt and pepper

Cover tightly with foil and roast until done (time varies according to size of peppers)

Peppers are done when a knife can slice through them easily and they are lightly charred
