What you’ll need: jasmine green tea, purple taro powder, coconut sugar, whole milk, dry tapioca pearls, and vanilla extract.
Boil water, then add dry tapioca pearls. Turn the heat down and simmer until done. Follow manufacturer’s instructions.
Once the tapioca pearls are done cooking, add coconut sugar and stir until dissolved. Allow to soak for 30 minutes covered.
Meanwhile, prepare your jasmine green tea, steeping for at least 5 minutes.
Add taro powder, coconut sugar, and vanilla extract to the tea. Mix until no clumps remain. Allow to cool in the fridge while tapioca pearls soak.
After 30 minutes, remove lid from the tapioca pearls and set aside. Don’t strain if you’re planning on saving the pearls for later.
Put together your taro bubble tea! Add tapioca pearls, then taro tea mixture, followed by whole milk.
Top with ice, and serve!
