Easy Tortellini Amatriciana
Heat oil in pan on medium

Add guanciale (Pancetta or bacon) and cook until browned & crisp

Add chili flakes

And salt & pepper

Cook until onion is softened & then deglaze the pan with wine (optional)

Add the tomatoes

Break up tomatoes with back of spoon and simmer for 13-15min

When sauce is almost done cook tortellini according to package

Swirl in cream (optional)

Pour in the drained tortellini

Toss to coat with that delicious sauce!

Serve with torn basil and shaved cheese
