Easy vegan chilaquiles
Get the garlic cloves and peel the tomatillos.

Cook tomatillos, roast garlic, wash cilantro.

Blend the tomatillos, with the roasted garlic, cilantro, salt and a teaspoon of chili chipotle.

Put some baked corn chips on a plate.

Mix some extra firm tofu with minced red or yellow onion. Top the chips with it.

Drizzle with the sauce and finish with sliced avocado and fresh cilantro. ENJOY!
