Get your electric pressure cooker ready

Chop eggplant, onion, garlic, mushrooms and bell pepper

Sauté vegetables in a splash of broth for a few minutes while stirring

Add fresh spinach, dry pasta, herbs, spices, tomato paste and water

Close the lid and manually choose 8 minutes of cooking time

When the Instant Pot beeps, carefully do a quick steam release

Open the lid and stir your pasta, then adjust to taste preference
