Easy Vegan Spinach and Potato Curry
Gather ingredients (full list on our website)

In a large saucepan, boil potatoes

Sauteé chopped onion, garlic, ginger and spices until fragrant.

Add spinach to the onion & spices. Sauteé until wilted.

Add cooked potatoes to the spinach. Simmer 10 mins

In a pan, temper (gently fry) mustard and nigella (kalonji) seeds with oil, so they pop and sizzle.

Drizzle the seeds and now fragrant oil over the spinach and potatoes

Serve! Really delicious served with dahl!
