Eclair Recipe (Pâte À Choux)
Ingredients: 60ml milk, 60ml water, 2gr salt, 52gr unsalted butter, 75gr Bread Flour

And 2-3 eggs, I used 2 1/2.

Bring the milk, water, butter and salt to a boil.

Add the flour and quickly beat the dough until it’s relatively dry and leaves a film on the saucepan

Transfer the dough to a bowl and let it cool for a few minutes.

Add one egg at a time and whisk until well combined.

This is the consistency that we’re looking for.

Preheat the oven to 400F

Put the dough into a pastry bag.

Pipe onto parchment paper.

Ready to bake🔥

Bake at 400F for 15 minutes.

Reduce the heat to 350F after 15 minutes.

Bake until crispy and golden brown 🤩

Let it cool for 15-20 minutes.

Fill as desired.
