Eggplant Parmesan Pizza
Cut the eggplant into 1/4 inch disks.

Coat in flour.

Dip eggplant into the whisked eggs and coat in seasoned panko bread crumbs.

Heat pan with 4 tbsp of oil then add the eggplant.

Cook on medium low for 2-3 minutes each side.

Stretch the pizza dough to shape.

Poke holes in dough and bake at 475°F for 4 minutes.

Spread 3/4 cup of marinara sauce over the pizza dough.

Add 1/2 cup shredded mozzarella cheese.

Place the eggplant on top of the pizza.

Add about a tbsp marinara sauce on top of each eggplant disk.

Add remaining 1 1/2 cups shredded mozzarella cheese and bake in the oven at 475°F for 16 minutes.

Chop a small handful of fresh basil and a tbsp of parsley.

Finish the pizza off by sprinkling the basil, parsley, red pepper flakes, freshly cracked pepper and grated parmesan cheese.
