Wash and Slice eggplant 1/4 in thick.

Dice up desired toppings. We use sweet bell peppers and onions.

Place eggplant on grill stone and spray each side with olive oil. Sprinkle pizza seasoning on too.

Place grated parmesan cheese on top of eggplant, then sauce. And finally toppings.

Top with Mozzarella cheese.

These were made in my large bar pan.

These are the final product baked to perfection on grill stone. 400 degrees for 30-40 min.
