Cut eggplant lengthwise. Salt both sides. After a few minutes pat dry excessive water.

Fry eggplants in olive oil.

Flip the over to get that nice color on both sides.

Remove from the pan.

1 tbsp tomato paste.

1 can diced tomatoes or use fresh tomatoes.

Season with salt and black pepper and a pinch of cinnamon.

Bring back the eggplants.

Bake in the oven at 350 degree for 30 minutes.
